The hosts were gifted a two goal start within 10 minutes as Sol Buckner's side stuttered out the starting blocks.
But Saxons responded superbly to Buckner's half-time rally call.
Within minutes to the re-start Dom Whitaker slotted past Eastbourne's stranded keeper.
And Saxons continued to knock at the door which finally unlocked for a second time when Joe Lovell grabbed his 10th goal in nine games on 47 minutes.
Saxons poured forward looking for the winner but couldn't find the killer goal to finish off their Sussex Hockey Division Five opponents.
And as the minutes ticked away the hosts grabbed the winner with their only real foray into Saxons goal area leaving keeper Alex Jenner stranded.
Buckner said: "We dominated the second half but it was always an uphill task for us after a sluggish start."
